Black culinary history is the foundational story of American cuisine, shaped by the agricultural expertise, resourcefulness, and genius of enslaved and free African Americans Black Culinary History tells the stories of our peers and colleagues so that history doesn’t do it for us, so a huge mission of this project is to be the record of this generation in food.
